The quantities and steps below use the first named cut. Adapt other cuts for their actual trimming, bone and thickness; confirm doneness with a thermometer.
Ingredients
- Boneless ribeye, 500–700 g, cut 40–50 mm thick
- Small potatoes 350 g; asparagus 150 g
- Neutral oil 1 tbsp; unsalted butter 20 g
- Garlic 2 cloves; thyme 2 sprigs
- Salt and freshly ground black pepper to taste

Step by step
Thaw the beef in the fridge and pat dry. First roast halved, lightly oiled potatoes at 210°C until tender and golden, then reduce the oven to 120°C. Season the steak and set it on a rack.
Put the steak and its rack in the low oven. Insert a probe into the thickest centre and monitor continuously; thickness and oven behaviour change the time.
Heat a heavy pan with the remaining oil. Sear the steak on both faces and the fat edge until a deep brown crust forms. Lower the heat, add butter, garlic and thyme, and spoon the foaming butter over the steak.
Before removing from heat, measure at the centre and follow the safe endpoint below. Rest at least 3 minutes. Quickly pan-sear the asparagus while the steak rests.
Slice the ribeye across the grain. Plate with potatoes and asparagus, spooning over a little warm herb butter.
